Roast Turkey with Spicy Sausage Stuffing

All these years, we always thought that turkey were hard and dry, that's why we didnt have any turkey for so many years after experiencing super hard turkey ordered from one of the supermarkets..... but after trying my first roasted Christmas Turkey, we realised that commercialised turkey were prepared afew days before the actual order that's why the meat was tough.... With Chef Yong's Recipe,the turkey came out juicy and tender with the Creamy Red Curry Sauce. Everyone gave a thumbs up for this. My sister commented that's the best turkey she has ever tasted !



In less then 2 hours, the turkey was cooked.

I was musing the turkey that I've forgotten to take a pics of the sauce, but its really tasty !

Christmas Cake cum Log Cake

My cell group leader hold a Christmas Celebration in their house, everyone was supposed to bring a blessed potluck dish.
I'm honoured to be asked to make a piece of Birthday Cake for Jesus !
Needless to say I'm excited and decided to make a 10" cheesecake.

We sang Birthday Songs for Jesus, everyone commented that was nice. The almond flakes was a last minute decision as I found that the sides are quite unsightly...
I used the logcake cream for the side. Ah.. must be God's wisdom.




Log Cake

My first decorated logcake. The swiss roll was ordered from my office cafe. I used a non-diary cream and whipped till stiff add in chocolate cream and rum. Its great fun using those oranaments I've collected since last year. Will try to do my own swissroll next time.




My little girl was very sweet to have offered her "house" to decorate on the logcake.

Ang Ku Kueh (Pumpkin)

First time using pumpkin instead of sweet potato, this is not as fragrant as sweet potato. Its quite sticky and difficult to mould. But then it was polish off in a few minutes.

My girl's hand, isnt that cute. Then I noticed she have not cut her finger nails..

My husband loves it ! I stored it in an airtight container, and it stays crispy after 3days. He said its so much nicer then store bought. Guess got to try this soon.

This recipe uses whiskey, I was glad that finally I have an excused to open up one of the bottles displaying in our cabinet for many years. Hope to try this out soon. It tastes like ice-cream cake.

Cheese Scones - can be taken for breakfast as it taste like bread, soft inside and crispy outside.

Pineapple Tarts 2

My sister's neighbour gave us this pineapple tart recipe. She said its very easy and straighforward, just add everything in and thats it. Butter, egg and flour is the only ingredient used for the pastry. So after our children's exam we made it apoint that we got to try it out.
We were happy that it turns out good.... yummy yum !

Bread Making Foundation Lesson 4


Our last lesson at Creative Culinaire, I have lunch with my new friend,Iris from the same class at Judy's cafe, an enjoyable session with her.
I've not eaten any bread that we've learnt for this 4th lessons, and it tastes great as its uniquely tasty n fragrant. I really enjoyed these 4 lessons at Creative Culinaire, will consider joining their other classes. I've learnt alot from Judy Koh, and cant wait to try all the recipes that they have provided.

Our lunch - sushi cum pizza.. we can only have this when their father was not around cos he doesnt like pizza nor anything that's cheesy, so I grabbed this opportunity to make this for their lunch when he's away.

My children's favourite biscuit, this is my 5th batch making this already, but this time I used my newly bought Hello Kitty Mould bought from Japan! I tried my new baby Kitchenaid its really a breeze using this machine - no more kneading the dough anymore.....

Egg Tart

My children loves tart, so when Esther told me she has a reliable recipe I decided to try, she even bought for me the tart mould.
I think I still need alot of practice on moulding the mould to the tart, some of the pastry turn out thick and uneven.





Bread Making Lesson 3

Focaccia and Calzones
Focaccia (foh-ka-chi-ah) is a popular Italian flat bread similar to pizza, usually seasoned with olives and herbs and can be topped with cheese,meat or vegetables. Its soft will definetly give this a try. Accordingly to Chef Judy, Greek eats this as part of their meal and they live a very long life, the dough contains low in fat and sugar.

Calzone is a stuffed or folded pizza originating from Naples. The dough can be filled with an assortment of cheeses, meat and vegetables. It looks like our local curry puff, but trust me our local version is so much better then Calzone. I doubt I'll try this at home as no one seems to like it.




Pizza
This is the only dough we tried to knead with hand, and its fun !
I always imagine kneading with hand is tedious n needs lots of strength,
but its not, I'll definetly try this at home, probably allow my children to knead manually.

Swedish Limpa Bread
Limpa bread is a traditional Swedish Rye Bread flavoured with molasses,anise and orange peel. It is moist and flavourful and goes well with naturally sweet spreads such as cream cheese, jams and preserves.




Bread Making Lesson 2


Creative Culinaire Lesson 2, we baked many kinds of bread Pork Floss, Raisins Bun, Tuna Buns, Sandwich Loaf and Doughnuts. Very interesting but tiring. We finished at 6.30pm, and the instructor still thinks we are quite fast compared to other batch she thought so she gave us an extra recipe to let us try at home.

Igot my friend to buy this Anylock from Japan, it makes my pantry looks neater using this as compared to the one bought from Ikea. And its easy to use, juz fold it n slide to lock it, that's it.
